Description
A delicious and quick Chicken and Avocado Panini recipe featuring tender sautéed chicken, creamy mashed avocado, fresh spinach, and sharp cheddar cheese grilled between crispy sourdough bread slices. Perfect for a satisfying lunch or light dinner, ready in just 25 minutes.
Ingredients
Scale
Chicken
- 3 boneless, skinless chicken breasts (about 450g)
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking chicken)
Panini Filling
- 2 ripe avocados
- 1 cup fresh spinach leaves
- 1 cup shredded sharp cheddar cheese
Bread and Finishing
- 4 slices sourdough bread
- 1 tablespoon olive oil (for brushing panini)
Instructions
- Prepare and Season Chicken: Dice the chicken breasts into bite-sized pieces and season them evenly with salt and pepper to enhance flavor.
- Cook Chicken: Heat a skillet over medium heat and add a tablespoon of olive oil. Sauté the chicken pieces until they are golden brown and cooked through, about 7-10 minutes, stirring occasionally to ensure even cooking.
- Mash Avocados: While the chicken cooks, peel and pit the ripe avocados, then mash them in a bowl with a pinch of salt until creamy and smooth.
- Assemble Panini: On one slice of sourdough bread, layer fresh spinach, cooked chicken pieces, mashed avocado, and shredded cheddar cheese. Top with a second slice of bread to form a sandwich.
- Brush and Grill Panini: Brush both sides of the assembled panini generously with olive oil. Place it on a preheated skillet or pan over medium-low heat and grill for 3-4 minutes per side until the bread is golden brown and the cheese has melted, pressing gently with a spatula for even grilling.
- Serve: Remove the panini from the skillet, slice diagonally, and serve immediately while warm and melty.
Notes
- Use ripe avocados for the best creamy texture.
- Preheat the skillet before grilling the panini to ensure a crispy crust.
- If you have a panini press, you can use it instead of a skillet for grilling.
- Adjust seasoning according to taste preferences.
- To keep the chicken juicy, avoid overcooking during sautéing.
