Description

These Cheesy Potato Tacos are a delicious and satisfying vegetarian meal featuring tender, seasoned potatoes combined with melted cheddar cheese and fresh toppings. Perfectly spiced and easy to prepare, they make a great option for a quick weeknight dinner or casual gathering with a Mexican flair.

Ingredients

Scale

Potato Filling

  • 2 cups potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Toppings and Assembly

  • 8 small corn or flour tortillas
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded lettuce (optional)
  • 1/2 cup diced tomatoes (optional)
  • Sour cream or taco sauce for serving

Instructions

  1. Boil Potatoes: Place the diced potatoes in a pot of salted water and bring to a boil. Cook for about 10 minutes or until the potatoes are fork tender, then drain well.
  2. Sauté Aromatics: Heat olive oil and butter in a skillet over medium heat. Add the chopped onion and cook for about 3 to 4 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.
  3. Cook Potato Filling: Add the cooked potatoes to the skillet and gently mash them slightly with a spoon. Sprinkle in chili powder, cumin, paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally, until the potatoes develop a lightly crispy texture.
  4. Warm Tortillas: Warm the tortillas in a dry skillet or microwave until soft and pliable.
  5. Assemble Tacos: Spoon the potato mixture into each tortilla. Sprinkle generously with shredded cheddar cheese so it begins to melt from the heat of the potatoes.
  6. Add Toppings and Serve: Top the tacos with chopped cilantro, shredded lettuce, diced tomatoes, and sour cream or taco sauce if desired. Serve immediately while warm.

Notes

  • You can substitute Monterey Jack or Mexican blend cheese for the cheddar for different flavor profiles.
  • For extra flavor, add a few tablespoons of diced green chilies or cooked peppers to the potato filling.
  • If you prefer crunchy tacos, crisp the filled tacos in a skillet for a few minutes per side before serving.
