Ingredients
Scale
Corn Mixture
- 1 (15-ounce) can whole kernel corn, drained
- 1 (15-ounce) can cream-style corn
Dairy & Fats
- 1 cup sour cream
- 4 ounces cream cheese, softened
- 1/2 cup unsalted butter, melted
- 1 cup shredded cheddar cheese
Dry Ingredients & Seasoning
- 1 (8.5-ounce) box corn muffin mix (e.g., Jiffy)
- 1/2 teaspoon garlic powder (optional)
- Salt and pepper to taste
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking and make cleanup easier.
- Mix main ingredients: In a large mixing bowl, combine the drained whole kernel corn, cream-style corn, sour cream, softened cream cheese, and melted butter. Stir thoroughly until the ingredients are well blended and smooth.
- Add cheese and dry ingredients: Stir in the shredded cheddar cheese, corn muffin mix, optional garlic powder, salt, and pepper. Mix gently but thoroughly until all ingredients are evenly incorporated.
- Prepare to bake: Pour the mixture into the prepared baking dish, spreading it out evenly for uniform cooking.
- Bake: Place the baking dish in the oven and bake for 40-45 minutes. The casserole should be set in the center and lightly golden brown around the edges when done.
- Cool and serve: Remove from oven and allow the casserole to cool for 5 minutes before serving. Optionally, garnish with extra shredded cheese or chopped parsley for added flavor and presentation.
Notes
- You can add chopped green chilies or jalapeños for a spicy kick.
- Substitute cheddar cheese with pepper jack for a different flavor twist.
- Make sure the cream cheese is softened to blend smoothly with other ingredients.
- Letting the casserole rest for a few minutes before serving helps it set and makes it easier to cut.
- This casserole pairs well with grilled meats or can be enjoyed as a comforting vegetarian side.
