Instructions
- Steam and Prep Cauliflower: Steam the cauliflower florets until they are tender. Once steamed, finely chop the cauliflower by hand or pulse it in a food processor until it reaches a finely chopped consistency suitable for mixing.
- Combine Ingredients: In a large bowl, mix the chopped cauliflower with eggs, shredded cheddar, grated Parmesan, breadcrumbs (or almond flour for low-carb), chopped green onions, minced garlic, salt, and black pepper. Stir until all ingredients are well combined into a uniform mixture.
- Form Patties: Scoop about 2 tablespoons of the mixture and shape it gently into small round patties, approximately 8 in total.
- Heat Oil: Heat the olive oil in a skillet over medium heat, ensuring the oil is hot enough to fry and crisp the patties properly without burning.
- Fry Patties: Fry the patties in batches, cooking each side for 3–4 minutes until they develop a golden brown and crispy crust.
- Drain and Serve: Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm, optionally topped with sour cream, avocado slices, or a poached egg for added richness and flavor.
