Ingredients
Scale
Cake Batter
- 1 box (15.25 oz) yellow cake mix
- 1/2 cup sour cream
- 1/4 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
Streusel Topping
- 1/2 cup brown sugar, packed
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, softened
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan to prepare for baking.
- Make the Cake Batter: In a large bowl, combine the yellow cake mix, sour cream, vegetable oil, eggs, and vanilla extract. Beat with a hand mixer or whisk by hand until the mixture is smooth and fully combined, approximately 2 minutes.
- Make the Streusel Topping: In a separate small bowl, mix together the brown sugar, all-purpose flour, and ground cinnamon. Add the softened unsalted butter, then use a fork or your fingers to blend everything together until crumbly and evenly mixed.
- Layer the Cake and Streusel: Pour half of the prepared cake batter into the greased pan and spread it evenly. Sprinkle half of the streusel topping over the batter layer for a sweet and crunchy texture.
- Add Remaining Layers: Pour the remaining cake batter on top of the streusel layer, smoothing it evenly. Then sprinkle the remaining streusel topping over the top to create a double layer of crumbly cinnamon sweetness.
- Bake: Bake in the preheated oven for 35-40 minutes. To check doneness, insert a toothpick into the center; it should come out clean. If the cake top browns too quickly, loosely cover the pan with aluminum foil halfway through baking to prevent over-browning.
- Cool and Serve: Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer the cake to a wire rack to cool slightly. Slice and serve warm or at room temperature for best flavor.
Notes
- Use room temperature eggs for better batter mixing.
- Sour cream adds moisture and tenderness to the cake.
- Ensure the butter for streusel is softened to easily blend with dry ingredients.
- Cover with foil mid-bake if top browns too quickly to avoid burning.
- This coffee cake is best enjoyed fresh but can be stored covered at room temperature for 2 days.
- Slice carefully with a serrated knife for clean pieces.
