Ingredients
Scale
Lobster
- 2 live lobsters (1.5 to 2 pounds each)
Butter Poaching Liquid
- 1 cup unsalted butter
- 1/2 cup water or lobster stock
- 2 tablespoons fresh lemon juice
- 1 teaspoon garlic, minced
- Salt, to taste
Garnish & Serving
- Fresh herbs (like chives or parsley, for garnish)
- Lemon wedges (for serving)
Instructions
- Prepare the Lobsters: Bring a large pot of salted water to a boil. Add the live lobsters and cook for about 5-7 minutes until they turn bright red, indicating they are cooked through.
- Cool and Extract Meat: Remove the lobsters from the boiling water and allow them to cool enough to handle safely. Then, remove the meat from the claws and tails, discarding the shells. Cut the lobster meat into large pieces or leave whole as preferred.
- Make the Butter Poaching Liquid: In a medium saucepan, melt the butter over low heat. Add water or lobster stock, fresh lemon juice, and minced garlic. Stir gently to combine and keep the heat very low to prevent the butter from boiling.
- Poach the Lobster: Once the butter mixture is warm (around 140°F/60°C), gently submerge the lobster meat into the mixture. Poach for 8-10 minutes until the lobster is tender and heated through.
- Serve: Using tongs, carefully remove the poached lobster from the butter. Let any excess butter drip off. Season with salt to taste and garnish with fresh herbs and lemon wedges. Serve immediately for best flavor and texture.
Notes
- Ensure the butter is kept at a low temperature to avoid boiling, which could separate the sauce.
- Using lobster stock instead of water enhances the depth of flavor in the poaching liquid.
- Poached lobster can be served with crusty bread or over a light salad for a complete meal.
- Store any leftover butter mixture for drizzling on other seafood or vegetables.
