Ingredients
Scale
Granola Crust
- 1 cup old fashioned oats
- 1/2 cup walnuts, finely chopped
- 2 tablespoons sesame seeds
- 3 tablespoons coconut oil, melted
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Filling
- 1 1/2 cups Greek yogurt, coconut yogurt, or almond yogurt
Topping
- 1 cup mixed fruit (strawberries, raspberries, blueberries, apples), chopped or sliced as desired
Instructions
- Preheat the oven: Set your oven to 325°F (163°C) to prepare for baking the granola crust.
- Mix granola ingredients: In a large bowl, combine the oats, finely chopped walnuts, sesame seeds, melted coconut oil, honey, vanilla extract, and ground cinnamon. Stir until all the ingredients are evenly coated.
- Prepare tart pans: Grease eight mini tart pans to prevent sticking. Press about 3 tablespoons of the granola mixture firmly into the bottom and up the sides of each pan, creating a tart shell.
- Bake the crusts: Place the tart pans in the oven and bake for 15 to 17 minutes or until golden brown and set.
- Reshape crusts: While the crusts are still hot from the oven, use the back of a spoon to gently press down the centers and reshape the sides to maintain a tart form.
- Cool the crusts: Allow the tarts to cool completely in their pans before carefully removing them to keep their shape intact.
- Add the filling: Spoon 3 to 4 tablespoons of your chosen yogurt into each tart shell and smooth the yogurt evenly for a beautiful finish.
- Top with fruit: Arrange a colorful and fresh assortment of mixed fruits on top of the yogurt layer for natural sweetness and a burst of flavor.
- Serve immediately: Enjoy these tarts right away to keep the granola crust crisp and the flavors fresh.
Notes
- You can substitute walnuts with pecans or almonds for a different nutty flavor.
- Use any yogurt you prefer to suit dietary needs or taste preferences, including non-dairy options.
- For added sweetness, drizzle extra honey over the fruit topping before serving.
- These tarts can be prepared a few hours in advance, but add the fruit topping just before serving to maintain freshness.
- To make this recipe vegan, use maple syrup instead of honey and plant-based yogurt.
