- 100g halloumi, sliced

Avocado Spread
- 1 ripe avocado
- Juice of half a lemon
- 1 tsp red pepper flakes
- Sea salt, to taste
- Cracked black pepper, to taste

- 2 eggs
Instructions
- Cook Bacon and Halloumi: Heat a skillet over medium heat and cook the streaky bacon slices until they become crispy. Add the halloumi slices to the skillet and cook until they are golden brown on both sides. Remove both bacon and halloumi from the skillet and set them aside.
- Prepare Avocado: In a small bowl, mash the ripe avocado. Add the lemon juice, red pepper flakes, sea salt, and cracked black pepper, then mix well until combined to create a flavorful avocado spread.
- Assemble Bagel: Slice the bagels in half and spread the mashed avocado generously on the bottom half of each bagel. Layer the crispy bacon and golden halloumi slices on top of the avocado spread.
- Make Egg in the Hole: Carefully crack an egg into the hole of each bagel, ensuring the yolk and white stay within the hollowed-out center.
- Air Fry: Preheat your air fryer to 190°C (375°F). Place the assembled bagels into the air fryer basket and cook for approximately 5 minutes, or until the egg is cooked to your desired level of doneness.
- Serve: Once cooked, carefully remove the bagels from the air fryer. Garnish with freshly chopped chives and serve immediately to enjoy a warm, hearty breakfast.
