Scale
Main Ingredients
- 1 1/2 cups plain or vanilla Greek yogurt
- 1 cup fresh or frozen blueberries
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
Toppings (Optional)
- 1/4 cup granola
Instructions
- Prepare Blueberry Sauce: In a small saucepan over medium heat, combine the blueberries, lemon juice, and 1 tablespoon of honey or maple syrup. Cook for about 5 minutes, stirring occasionally, until the blueberries break down and form a thick sauce. Remove from heat and allow the mixture to cool completely.
- Mix Yogurt Base: In a separate bowl, mix the Greek yogurt with the remaining tablespoon of honey or maple syrup and the vanilla extract until the mixture is smooth and well combined.
- Assemble Bites: Line a mini muffin tin with paper liners or use a silicone mold. Spoon about 1 tablespoon of the yogurt mixture into each cavity. Add a small spoonful of the cooled blueberry sauce on top of the yogurt, then use a toothpick or knife to gently swirl the sauce into the yogurt for a marble effect.
- Add Toppings: Sprinkle a little granola on top of each bite if desired for added texture and crunch.
- Freeze: Place the tray in the freezer for 2 to 3 hours or until the yogurt bites are completely firm.
- Serve: Once set, remove the bites from the mold and serve immediately or keep stored frozen.
Notes
- Silicone molds make it easier to remove the frozen yogurt bites.
- Store leftovers in an airtight container in the freezer for up to 2 weeks.
- You can substitute strawberries or raspberries for the blueberries to enjoy different berry flavor variations.
