Instructions

  1. Prepare Blueberry Sauce: In a small saucepan over medium heat, combine the blueberries, lemon juice, and 1 tablespoon of honey or maple syrup. Cook for about 5 minutes, stirring occasionally, until the blueberries break down and form a thick sauce. Remove from heat and allow the mixture to cool completely.
  2. Mix Yogurt Base: In a separate bowl, mix the Greek yogurt with the remaining tablespoon of honey or maple syrup and the vanilla extract until the mixture is smooth and well combined.
  3. Assemble Bites: Line a mini muffin tin with paper liners or use a silicone mold. Spoon about 1 tablespoon of the yogurt mixture into each cavity. Add a small spoonful of the cooled blueberry sauce on top of the yogurt, then use a toothpick or knife to gently swirl the sauce into the yogurt for a marble effect.
