Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare the Ricotta Filling: In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and lemon zest if using. Stir thoroughly until the mixture is smooth, creamy, and well-blended.
- Assemble the Croissants: Slice each croissant horizontally to create top and bottom halves. Spread a generous layer of the ricotta mixture onto the bottom half of each croissant. Evenly sprinkle fresh blueberries over the ricotta filling.
- Bake the Croissants: Arrange the assembled croissants on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the croissants turn golden brown and the ricotta filling is slightly set but still creamy.
