Description

A delightful Blueberry & Ricotta Croissant recipe combining flaky, buttery croissants with a creamy ricotta filling infused with honey and vanilla. Fresh blueberries add a burst of juiciness, while a honey drizzle and optional lemon zest brighten the flavor, making this a perfect indulgent breakfast or brunch treat.

Ingredients

Scale

Croissants

  • 4 large croissants (preferably fresh or day-old)

Ricotta Filling

  • 1 cup ricotta cheese (whole milk or part-skim)
  • 1 tablespoon honey (plus more for drizzling)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (optional, for a citrusy twist)

Fruit & Garnish

  • ½ cup fresh blueberries (plus more for garnish)
  • 1 tablespoon powdered sugar (optional, for dusting)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the Ricotta Filling: In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and lemon zest if using. Stir thoroughly until the mixture is smooth, creamy, and well-blended.
  3. Assemble the Croissants: Slice each croissant horizontally to create top and bottom halves. Spread a generous layer of the ricotta mixture onto the bottom half of each croissant. Evenly sprinkle fresh blueberries over the ricotta filling.
  4. Bake the Croissants: Arrange the assembled croissants on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the croissants turn golden brown and the ricotta filling is slightly set but still creamy.
  5. Finish with Honey Drizzle: Remove the croissants from the oven and immediately drizzle additional honey over the top of each for enhanced sweetness and shine.
  6. Serve & Garnish: Garnish each croissant with extra fresh blueberries and a light dusting of powdered sugar if desired. Serve warm to enjoy the perfect blend of flaky pastry, creamy ricotta, and sweet honey notes.

Notes

  • Use day-old croissants for better toasting and texture, but fresh croissants work well too.
  • Lemon zest is optional but adds a lovely citrus brightness to the filling.
  • Be careful not to overbake to keep the ricotta filling creamy.
  • For a dairy-free version, substitute ricotta with a vegan cream cheese alternative.
  • Serve immediately after baking for the best flavor and texture.
