Description

Blackberry Compote French Toast is a delightful breakfast treat featuring thick slices of brioche soaked in a spiced egg and cream mixture, pan-fried to golden perfection, and topped with a luscious homemade blackberry compote. This easy recipe combines fresh blackberries, warm spices, and rich custardy flavors, making it perfect for weekend brunches or special occasions.

Ingredients

Scale

Blackberry Compote

  • 3 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1 cup fresh blackberries (for finishing)

French Toast

  • 8 slices brioche bread, about 1-inch thick
  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 2 tablespoons unsalted butter, for cooking

Serving and Garnishes

  • Powdered sugar, for dusting
  • Fresh mint leaves, for garnish
  • Whipped cream or Greek yogurt, for serving
  • Maple syrup, for drizzling

Instructions

  1. Prepare the Blackberry Compote: In a medium saucepan, combine 3 cups of fresh blackberries, granulated sugar, and water. Place over medium heat and bring to a gentle simmer, stirring occasionally. Simmer for 10-15 minutes until the berries break down and the mixture thickens slightly. Remove from heat and stir in the remaining 1 cup blackberries, lemon juice, lemon zest, and ground cinnamon. Allow to cool slightly before serving. Leftovers can be refrigerated in an airtight container for up to 3 days.
  2. Mix the Custard: In a large, shallow dish, whisk together the eggs, whole milk, and heavy cream. Add granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Whisk well until fully combined to create the custard base for the French toast.
  3. Prepare the Bread: Lay out the brioche slices on a clean surface. These will be dipped into the custard mixture for soaking.
  4. Cook the French Toast: Melt about 1 tablespoon of unsalted butter in a large skillet or griddle over medium heat. Dip each slice of brioche into the custard, coating both sides evenly and letting soak for 15-20 seconds per side to absorb the mixture. Carefully place the soaked slices in the hot skillet without overcrowding.
  5. Fry Until Golden: Cook each slice for about 2-3 minutes on each side, or until golden brown and cooked through with an internal temperature of 160°F. Add more butter to the skillet as needed and repeat the soaking and cooking process with remaining slices.
  6. Keep Warm: Place cooked French toast slices on a baking sheet in a single layer and keep warm in a preheated oven at 200°F until ready to serve.
  7. Serve: Arrange the French toast on plates and spoon the warm blackberry compote generously over the top. Dust with powdered sugar and garnish with fresh mint leaves. Serve immediately with whipped cream or Greek yogurt and a drizzle of maple syrup if desired.

Notes

  • Use brioche or similarly thick, soft bread for best results. Day-old bread also works well to absorb custard without falling apart.
  • If you prefer a thinner compote, simmer it for less time; longer simmering will thicken it further.
  • French toast can be kept warm in the oven but is best enjoyed fresh for optimal texture.
  • The compote can be made ahead and refrigerated for up to 3 days.
  • Use fresh blackberries for the best flavor, but frozen can be substituted if thawed and drained.
  • Adjust the sugar amount in the compote and custard to taste, depending on the sweetness of your berries.
