  • ½ cup Freshly Grated Asiago Cheese
  • ½ cup Freshly Grated Mozzarella Cheese
  • 2 tablespoons Italian Seasoning
  • 2 Large Eggs

Breading

  • 1 ½ cups Italian Bread Crumbs or Panko
  • 2 tablespoons Olive Oil
  • ½ cup Finely Grated Parmesan Cheese

Instructions

  1. Noodle Preparation: Boil the lasagna noodles until al dente. Once cooked, rinse them to cool down and prevent sticking. Mix the ricotta, Parmesan, Romano, Asiago, mozzarella cheeses, Italian seasoning, and 2 eggs in a bowl until well combined. Spread this cheese mixture evenly over each noodle, then roll the noodles carefully. Freeze the rolled noodles to firm them up and make them easier to handle for breading.
  2. Batter Preparation: Scramble the 2 eggs in a shallow bowl. In another bowl, blend the olive oil with the Italian bread crumbs or panko and add the finely grated Parmesan cheese. This mixture will be used to bread the frozen lasagna rolls.
  3. Breading the Rolls: Dip each frozen rolled lasagna into the scrambled eggs, then coat thoroughly with the bread crumb and Parmesan mixture, making sure to cover all sides for a crispy crust.
  4. Air Fryer Cooking: Preheat the air fryer to 400°F (around 200°C). Spray the air fryer basket with olive oil spray to prevent sticking.
